{"id":324,"date":"2020-09-10T15:17:00","date_gmt":"2020-09-10T15:17:00","guid":{"rendered":"http:\/\/www.strongwithmitzi.net\/blog\/?p=324"},"modified":"2021-07-06T17:56:58","modified_gmt":"2021-07-06T17:56:58","slug":"curried-pumpkin-soup","status":"publish","type":"post","link":"https:\/\/www.strongwithmitzi.net\/blog\/curried-pumpkin-soup\/","title":{"rendered":"Curried Pumpkin Soup"},"content":{"rendered":"\n<p>As the temperature outside will begin falling, we start craving soups and gumbo.&nbsp; This curry is easy and delicious.&nbsp; &nbsp;You can always add a little crunch with Jillz Crackers or Simple Mills crackers.&nbsp; Enjoy!!!<\/p>\n\n\n\n<p><strong>Curried Pumpkin Soup<\/strong><\/p>\n\n\n\n<p>Serves 8<\/p>\n\n\n\n<p>1 large onion, chopped<\/p>\n\n\n\n<p>1 clove garlic, minced<\/p>\n\n\n\n<p>1 TBLS ghee<\/p>\n\n\n\n<p>Two 16-oz cans solid pack pumpkin<\/p>\n\n\n\n<p>1-1\/2 T. curry powder (I use 1 regular, 1\/2 hot)<\/p>\n\n\n\n<p>1\/4 t. pepper<\/p>\n\n\n\n<p>1\/2 t. lemon-pepper seasoning<\/p>\n\n\n\n<p>1 t. Coconut sugar<\/p>\n\n\n\n<p>1\/4 t. nutmeg<\/p>\n\n\n\n<p>1 bay leaf<\/p>\n\n\n\n<p>4 c. low-fat chicken broth<\/p>\n\n\n\n<p>1-1\/2 c. Coconut Milk<\/p>\n\n\n\n<p>1\/2 c toasted pumpkin seeds, sunflower seeds, or toasted almonds<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/secureservercdn.net\/192.169.220.223\/942.631.myftpupload.com\/wp-content\/uploads\/2017\/01\/Mitzi-pumpkin-e1505875071107-300x225.jpeg\" alt=\"\" class=\"wp-image-549\"\/><\/figure><\/div>\n\n\n\n<p>In a nonstick skillet, saute\u2019 onion and garlic in ghee until very soft, about 5 minutes.&nbsp; Stir in pumpkin, curry, pepper, lemon-pepper, sugar, nutmeg, bay leaf &amp; broth.&nbsp; Bring to a boil, reduce heat and simmer for 30 minutes.&nbsp; Remove from heat.&nbsp; Discard bay leaf.&nbsp; Stir in milk and reheat gently; do not boil.&nbsp; Serve garnished with toasted seeds or nuts.&nbsp; Freezes well.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/secureservercdn.net\/192.169.220.223\/942.631.myftpupload.com\/wp-content\/uploads\/2017\/01\/mitzi-pumpkin2-169x300.png\" alt=\"\" class=\"wp-image-550\"\/><\/figure><\/div>\n\n\n\n<p><em>This recipe came from one of my sweet clients, Mrs. Gail Little<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>As the temperature outside will begin falling, we start craving soups and gumbo.&nbsp; This curry is easy and delicious.&nbsp; &nbsp;You can always add a little crunch with Jillz Crackers or Simple Mills crackers.&nbsp; Enjoy!!!
