Straight from the Instant Pot
3# of russet potatoes – cut
Add 2-3 tbls of evoo or ghee to Instant Pot.
Press Sauté
Drop potatoes in. Sauté for about 4 minutes. Stirring every so often
3 TBLS minced garlic
3 TBLS parsley
Salt/pepper to taste
Close lid. Pressure cook for 8 minutes.
Done.
For extra crisp… I dumped mine on a baking sheet. Turned oven to broil and let it crisp the tops. So good.
